Ingredients

2 pounds of Yukon gold potatoes

1/2 cup diced onions

1/2 cup diced celery

1/2 cup diced dill pickles

1/2 cup chunked cooked bacon

1/2 cup diced hard-boiled eggs

1/4 cup chopped fresh parsley

1/2 cup mayonnaise

1/4 cup sour cream

2 tbsp Dijon mustard

2 tbsp white wine vinegar

1 tbsp Wurzpott Sweet Paprika

Salt, to taste

Directions
Peel and chop the potatoes into small cubes and place them in a large pot.
Cover the potatoes with water and bring them to a boil over high heat.
Reduce the heat to medium-low and simmer for 10-15 minutes, or until the potatoes are tender when pierced with a fork.
Drain the potatoes and let them cool to room temperature.
In a large bowl, combine the cooled potatoes, onions, celery, dill pickles, bacon, hard-boiled eggs, and parsley.
In a small bowl, whisk together the mayonnaise, sour cream, Dijon mustard, white wine vinegar, paprika, salt, and pepper.
Pour the dressing over the potato mixture and toss until well-coated.
